Roasted Turkey & Hummus Sandwich with Sweet Red Pepper and Spinach

For those of you who happen to hate hummus, this sandwich might change your mind forever.  For those of you who already love hummus, this sandwich might send you into fits.   Hard to believe that a couple spoonfuls of protein-rich hummus can transform a regular turkey sandwich into such a creamy, zingy stack of yumminess.

I’m not sure exactly when I fell in love with hummus, but I can’t imagine life without it.  Of course, some versions are better than others.  The very best is homemade, but it involves a food processor and a mess, so you might want to save it for a weekend venture.  I’ve included below my favorite homemade hummus recipe, adapted from Cuisine at Home’s Soups, Stews, and Chilies cookbook.  If you don’t have time for that, all sorts of great store-bought hummus is out there.  My current favorites are Grandessa original tahini hummus (ALDI) and Sabra roasted red pepper hummus (almost any major grocery).

Play around with the ingredients on this sandwich based on your family’s favorite sandwich stuffers.  If someone doesn’t like spinach, trade it out for romaine or your favorite greens.  (But I bet your kids will devour this version of spinach, enveloped with the creamy hummus and gooey cheese.)  If you can’t roll with the roasted red pepper, stick with tomatoes.  And any meat will work.  Or if you’re a vegetarian, throw in cucumbers instead of the meat.  Just don’t leave out the hummus!

If you are fixing a quick lunch for only yourself, simply stick this sandwich in the toaster oven (instead of the broiler).  It will take you 5 minutes, tops.

I guarantee y’all will feel like a million bucks after you eat this sandwich.  Now shake that booty!

Roasted Turkey & Hummus Sandwich with Sweet Red Pepper and Spinach

Prep time: 10 minutes

Serves 4


  • 8 slices 100% whole grain bread
  • Homemade hummus (below) or your favorite store-bought hummus
  • 8 thin slices low-sodium deli turkey or chicken
  • 4 slices pepper jack cheese (or your favorite cheese)
  • Roasted red pepper (in a jar, found near the pickles)…or fresh red pepper slices
  • Fresh baby spinach


  • Preheat oven broiler, then get out your ingredients
  • Place bread slices on a baking sheet and broil for 2 minutes or so, until bread begins to brown
  • Remove from oven, flip bread slices, and generously spread all 8 slices with humus
  • Layer meat and cheese on 4 slices, and layer spinach and red pepper on the other 4
  • Return to oven and broil for 3 to 4 minutes until cheese is melted

Mediterranean Hummus

Prep time: 15 minutes

Makes 1.5 cups (about 12 servings…it keeps great in the fridge as a dip for a quick and healthy snack)


  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 2 Tbsp fresh lemon juice (about 1/2 lemon)
  • 2 Tbsp olive oil
  • 1 tsp toasted sesame oil (found in Asian aisle of the grocery)
  • 1 to 2 cloves garlic, minced
  • 1/2 tsp ground cumin
  • pinch of cayenne


Puree all ingredients in a food processor until smooth, and season with salt
